Tempeh 'bacon' breakfast

Who knew you can have a vegetarian fry-up breakfast?! This tempeh has been marinated to resemble bacon.
Preparation
Slice the tempeh as thinly as possible and lay them next to each other in a shallow dish.
Boil 4 tbsp soy sauce, 2 tbsp dark muscovado sugar, the apple cider vinegar, hot chilli sauce to taste and the paprika powder for 2 minutes and pour over the tempeh. Leave to marinate for at least 2 hours or overnight. If you marinate it for longer than 2 hours, make sure it's in the fridge.
Drain the marinated tempeh. Heat the oil in a frying pan and fry the tempeh until crisp and brown. Take out of the pan and if needed heat a little more olive oil and fry the eggs the way you like it. Fry the sausages until brown and hot. Gently heat the baked beans (or have them cold if you prefer).
Serve the vegetarian fry-up with the sausages, baked beans, ketchup and wholemeal bread.

- 1 block of tempeh
- 2 tbsp apple cider vinegar
- 2 tsp paprika powder
- 5 tbsp soy sauce
- 2,5 tbsp dark muscovado sugar
- 6 tbsp olive oil
- 4 eggs
- Hot chili sauce to taste
- 1 can baked beans
- 4 slices wholemeal bread
- 4 vegetarian or vegan sausages
- Ketchup to serve
