Who knew you can have a vegetarian fry-up breakfast?! This tempeh has been marinated to resemble bacon.

Preparation

Slice the tempeh as thinly as possible and lay them next to each other in a shallow dish.

Boil 4 tbsp soy sauce, 2 tbsp dark muscovado sugar, the apple cider vinegar, hot chilli sauce to taste and the paprika powder for 2 minutes and pour over the tempeh. Leave to marinate for at least 2 hours or overnight. If you marinate it for longer than 2 hours, make sure it's in the fridge.

Add together the tomatoes, ginger and garlic and boil for around 15 minutes. Add the rest of the soy sauce, the dark muscovado sugar and a little bit of hot chili sauce and boil for another 5 minutes or so.

Drain the marinated tempeh. Heat the oil in a frying pan and fry the tempeh until crisp and brown. Take out of the pan and if needed heat a little more olive oil and fry the eggs the way you like it.

Serve the vegetarian fry-up with the tomato relish and wholemeal bread.
