Cake for Women (and men too!)
Seasonal Vegan, Vegetarian, Dairy free, Egg free recipe
Soya contains isoflavones which can help with menopausal symptoms, like hot flushes and mood swings. The essential fatty acids in the seeds can help with stiffness in the joints as well as brittle nails and hair.
Pumpkin seeds are high in zinc and sesame seeds are high in calcium - so as well as being delicious it is a very healthy cake, too!
Preparation
Combine all the dry ingredients in a mixing bowl and mix well. Add the soya milk and malt extract and leave to stand for half an hour. If the mixture is too stiff, add a little more soya milk. If too wet, add a little more flour.
Put the mixture into a greased loaf tin and bake in the oven (190C/gas mark 5) for around 1 hour. If a skewer comes out dry, the cake is ready.
Enjoy with some butter or margarine... just like that, simple!

- ½ tsp ground cinnamon
- ½ tsp ground ginger
- ½ tsp ground nutmeg
- 100g linseeds
- 100g porridge oats
- 100g soya flour
- 100g wholemeal flour
- 2 pieces of stem ginger, chopped
- 200g raisins
- 50g pumpkin seeds
- 50g sesame seeds
- 50g sunflower seeds
- 1tbsp malt extract
- 750ml soya milk
